Due to restrictive legislation, this is the only agave allowed in tequila production.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The use of 100% agave Tequilana is one of the first differences in the quality of a product. Unfortunately, there are tequilas that have a mix of other sugars such as sugar cane molasses and transgenic corn. As producers we provide traceability, always including the specific estate name, planting and harvest year, allowing consumers to verify the origin of the agave by the official agave registration number. Demand it! A grower must register agave within one year of planting to comply with the tequila industry regulations. Mature agave is fundamental for traditional tequila production; years of maturation impart great depth of flavor and complexity. A jima larga leaves more penca, or spike, than a jima normal,which in turn leaves more than jima rasurada, which leaves essentially none. The type of jima depends on the sugar content of the agave: the higher the sugar content, the larger the penca&nbsp; left on the agave and vice versa.
