The story of Siembra starts with the relationship of the people with the land. These plants and the people behind these spirits have a connection to their lands that go back hundreds, if not thousands of years. <\/p>\n<\/div>\n<\/div>\n\n\n\n

100% Agave Tequilana Weber Azul<\/h5>\n\n\n\n

Also called \u201cBlue Agave.\u201d Known for high sugar content, relatively fast maturity, easy  cloning, and beautiful blueish spikes. Due to restrictive legislation, this is the only agave allowed in tequila production.<\/p>\n\n\n\n

The use of 100% agave Tequilana is one of the first differences in the quality of a product. Unfortunately, there are tequilas that have a mix of other sugars such as sugar cane molasses and transgenic corn. It is important to look for 100% agave or 100% puro de Agave on tequila labels.<\/p>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

Estate Grown<\/h5>\n\n\n\n

Note: As each lot varies, we no longer specify on our bottles estate grown and single estate on each bottle. <\/em><\/strong><\/p>\n\n\n\n

Agave sourced from producer owned land is Estate grown.This minimizes the need for intermediaries, who are known for utilizing questionable practices that harms jimadores and the agave market alike.<\/p>\n<\/div>\n<\/div>\n\n\n\n

Single Estate<\/h5>\n\n\n\n

A single estate tequila uses agave grown, harvested, and processed within one location. As producers we provide traceability, always including the specific estate name, planting and harvest year, allowing consumers to verify the origin of the agave by the official agave registration number. It offers a distinction of its terroir. Added note:<\/em> All batches of Siembra are single estate<\/strong> but not all are estate grown.<\/strong><\/p>\n<\/div>\n<\/div>\n\n\n\n

Agave Registration<\/h5>\n\n\n\n

Traceability guarantees the use of agave tequilana grown within the boundaries of the denomination of origin of tequila. Demand it! A grower must register agave within one year of planting to comply with the tequila industry regulations. The registry also aids in monitoring how much inventories of agave is available in the industry, and prevents the over growth and under production of Agave.<\/p>\n\n\n\n

At Siembra we emphasize the topic of agave registration to start the conversation on this mandatory and sensitive part of the process ensuring transparency and traceability within the industry.<\/p>\n\n\n\n

Note: Golden Triangle: In the Highlands, there is the Golden Triangle, an area with optimal soil, climate, and sun conditions for the development of Agave tequilana Weber.<\/em><\/p>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n

Planting and Harvest<\/h5>\n\n\n\n

We\u2019re picky. Mature agave is fundamental for traditional tequila production; years of maturation impart great depth of flavor and complexity. Our agave centric methods demand great raw material.At Siembra, we aim to harvest agaves, “pintos”, and “fajillados”.<\/em> This indicates that the agave has reached full maturity, which is evidenced by the reddish coloring of the pencas<\/em> around the equator of the pi\u00f1a<\/em>.<\/p>\n<\/div>\n<\/div>\n\n\n\n

Jima Type<\/h5>\n\n\n\n

This refers to how close to the pi\u00f1a the jimadores chop the agave\u2019s spikes. A jima larga leaves more penca, or spike, than a jima normal,which in turn leaves more than jima rasurada, which leaves essentially none. The type of jima depends on the sugar content of the agave: the higher the sugar content, the larger the penca  left on the agave and vice versa. In both the Valles and Highlands, a normal jima is common.<\/p>\n\n\n\n
