Celebrating the Prolongation of Tradition
Special production tequilas provide an opportunity to honor the deep connection between tequila and mezcal traditions. Their character is shaped by techniques long practiced by mezcal-producing communities, reflecting a shared heritage of craftsmanship, innovation, and respect for the agave.

Roasting
Brick Oven
A slow, three day process that steam cooks the agave piñas, crucial for converting starches into fermentable sugars- a hallmark of traditional tequila production. This allows for a rich, distinct, and complex flavor profile in our tequila.

Extraction
Roller Mill – Tahona
The tahona is a heavy stone wheel that rolls and macerates roasted agave to extract all the sweet juices within. Only a few distilleries in the tequila category currently use this method. This process imparts a unique characteristic.

Fermentation
Natural Brick
Brick tanks lined with fiber glass which maintains an ambient yeast colony that naturally ferment all Siembra Valles tequilas. Bagasse (Agave fibers from extraction) is added to enhance agave flavor and boost this natural fermentation.

Fermentation
Wooden Vats
Since it is vital to flavor development, Carlos and David wanted to pay particular attention to fermentation. Siembra Alteño is spontaneously fermented in wooden pine vats with native yeast proprietary to the Alteña Distillery.

Distillation
Copper Serpentine
Copper has unique flavor benefits in tequila distillation, Distilling in stainless steel with copper serpentines ensures that every drop of tequila touches copper, but keeps costs attainable for small productions. We never use column stills; which erase flavors for high efficiency.
Copper’s chemical properties naturally enhance the flavor profile of agave due its heat conductivity. Even heating ensures consistent evaporation. As a catalyst, copper promotes the formation of esters– a fruity smelling compound that adds to the aroma, texture, and flavor of the final spirit.
In the case of Siembra Valles Blanco and High Proof, the use of the combination of stainless steel and copper provides unique organoleptic characteristics found at Cascahuin Distillery.

Resting
20-litre Demijohns w/ Corn Cobs
This is unique to Siembra Valles High Proof and Siembra Valles Ancestral, an old common practice used amongst maestro Mexcaleros. Dried corn cobs cap the demijohns and allow for slow natural oxygenation. The most volatile compounds oxidize first, leaving high ABV spirits that are organoleptically balanced and wonderfully palatable.
